Federico's has been a family-owned restaurant since 2009. Beginning on the North Shore of Kauai, HI. Today, Federico's remains a premiere destination for tourists from all over the world to come and enjoy modern and traditional Mexican dishes and other Island-inspired fares. In addition to the Hawaii location, a new location was introduced to the central coast of California, here in Morro Bay in 2023.
Federico's Fresh Mex is led by Chef Freddie who was the Chef de Cuisine at the Princeville Hotel and who began in the culinary field as a Chef in 2001 at the St. Regis Monarch Beach in Dana Point, CA. He has worked with different chefs from all over the globe like Master Chef Azmin Ghahreman, Chef Frederic Castan from France, and Chef Ross Turnbull from Canada.
Federico's techniques differ from other quick-service Mexican restaurants because all items are made fresh to order, with no shortcuts. Our highest priority is our guests, quality, and flavor.
Federico's is owned by husband and wife duo Chef Freddie and Maria Hernandez who started the restaurant together on Kauai in 2009. Specializing in Mexican, American, Fresh fish and vegetarian dishes, Federico's was the original fresh mex cuisine on Kauai , pioneering a new style of baja inspired fresh mexican dishes and homemade sauces that have since been adopted by the majority of other mexican restaurants now on Island. The restaurant was born from the skills that chef Freddie has acquired over many years in the culinary industry working with world class chefs.
Both Morro Bay and Hanalei locations are in similar beach towns that give inspiration to the vibe, feeling, and ingredients you see when visiting the restaurants. Today, Federico's has expanded to the central coast of California where it is trying to build a name and legacy for itself among many other Mexican restaurants.
